Red Beans and Rice
1 tbsp Canola Oil
1 Cup Chopped Onion
½ Cup Chopped Bell Peppers
½ Cup Chopped Celery
1 tsp Salt
½ tsp Cayenne Pepper
¼ tsp Pepper
5 Bay Leaves
1 Pound Ham, cut
1 pound Smoked Sausage
1 lb Dried Red Beans
1 tbsp Chopped Garlic
8 cups Water
Cooked Rice
Heat oil in large pan. Sauté onions, bell peppers, celery, salt, cayenne, pepper and thyme for about 5 minutes. Add the bay leaves, ham, and sausage, sauté for 5-6 minutes. Add the beans, garlic and just enough water, about 8 cups, to cover the ingredients. Bring to a boil then reduce heat to medium, simmer uncovered for 3-3 ½ hours, stirring occasionally. Add water when needed if the mixture starts to become too thick. The mixture should be soupy but not watery. Serve over rice.
